Two imported wood fire pizza ovens are designed to be the main attraction, positioned behind a glass-topped half-height wall in a specialized pizza prep area visible for spectators. They are the finish line of a kitchen neatly divided into distinct, dedicated zones for each step of the process. Produce prep, in-house dough prep and plenty of walk-in space for its two-day cold proof, warewash, and corridor cookline situated opposite the service prep line are each stationed out with all necessities in reach.
Our aim was to help to streamline each stage by providing defined, localized areas to reduce steps and enhance efficiency, which ultimately saves time, money, and minimizes staff stress. The wraparound bar located in the center of the dining area offers customer seating within view of the central ovens. Bartenders can easily serve from any side, or keep up with high volume with a cocktail station on each segment.
FSDC further coordinated the furniture arrangement and selected specific pieces, such as custom stained banquettes, as well as bar and dining chairs, to complement the establishment’s logo provided by the owner.
